Sweet Potato Salad with Blackberries


SWEET POTATO SALAD WITH BLACKBERRIES 🍓🍒🍓

Serves: 1 - 2 people

Time: 35 mins

INGREDIENTS: For Dressing: - 2 tablespoons of extra virgin olive oil - 1 tablespoon of freshly squeezed lemon juice - 1 tablespoon of honey - 1 tablespoon of peeled / grated ginger - salt and pepper to taste For Salad: - 2 medium sized sweet potatoes - 1/4 cup of oil for roasting potatoes - handful of almonds (crushed) - handful of chopped spinach - handful of sultanas - handful of halved blackberries (or other similar berry)

METHOD: 1) first start by chopping sweet potatoes into 2cm cubes and place on a baking tray. Sprinkle the potatoes evenly with 1/4 cup of oil, salt and pepper and roast in the oven on a medium to high heat for around 30 mins. (turn/toss the potatoes after about 15 mins so they cook more evenly). 2) while potatoes are cooking, you can combine all the dressing ingredients in a bowl and whisk to mix and then set aside. 3) combine the chopped spinach, sultanas, and crushed almonds and mix well with the potatoes once cooked. Afterwards add the dressing and toss lightly to coat all ingredients. 4) Finally garnish by sprinkling over the blackberries Enjoy!
